Characteristics
Colour: intense ruby red. Nose: very fruity on the nose with hints of currants, blackberry jam, plums, roasted aromas, with distinct notes of violets.
Taste: dry, warm, smooth, velvety, with a good concentration of elegant tannins, with a very long persistence that amplifies the organoleptic scents.
Pairings: red meats, braised meats, game, very mature cheeses, meditation wine.

Vinification
Manual harvesting of the grapes, after pressing the must is immediately sent to alcoholic fermentation in thermo-conditioned steel fermenters. Post-fermentation maceration on the skins for this wine is some weeks. Malolactic fermentation carried out entirely in barrique.
