Vinification

Wine made from Primitivo grapes grown in the province of Taranto. Manual harvest at right ripeness with careful selection of grapes. Manual bunch sorting with selector belt, fermentation of must at controlled temperature, traditional maceration for several days, good use of rack and return and repassing of must over the grape dregs. Carrying out malolactic fermentation in temperature-controlled barriques, using batonnage. Aging in French oak barrels and bottle aging.
