Characteristics
Colour: bright straw yellow.Nose: fairly intense with hints of golden apple, citron and chlorophyll.
Taste: dry, fresh, with good flavour, balanced and harmonic.
Pairings: First courses with white sauces, even rich ones, San Pietro fish, sole fillets with butter, chicken and vegetable couscous

In white with application of the reduction technique. Followed by 2-3 months of ageing on the lees before bottling.
