Grapes Falanghina
Characteristics Colour: straw yellow. 
Nose: extremely fruity and floral with hints of acacia, kaiser pear, dried apricot and candied citrus. 
Taste: dry, soft, with good acid structure and endowed with adequate taste-olfactory persistence. 

Pairings: wine suitable for simple but tasty dishes, reminiscent of the mineral sensations of the sea. It also goes well with white meats and medium-aged cheeses.
Serving temperature 12-14°C

Vinification

Only the best grapes from the most suited vineyards are used to produce this Falanghina. In this regard, grapes are selected carefully and harvested strictly by hand during the coolest hours of the day. The grapes in the winery undergo a cryo-maceration treatment at a temperature of 6-8°C in order to preserve aromas, prevent oxidation and enhance the typical characteristics of the variety. Soft pressing is carried out through the use of a pneumatic press, alcoholic fermentation is entirely carried out in steel fermenters through the use of selected yeasts at a temperature of 14-16°C with a duration of several days. Malolactic fermentation is not carried out and aging takes place in the bottle for many months.
