Vinification

Only the best grapes from the most suitable vineyards are used to produce this falanghina. To this end, the grapes are carefully selected and harvesting is strictly manual and takes place during the coolest hours of the day. The grapes in the cellar undergo a cryomaceration treatment at a temperature of 6-8°C in order to preserve the aromas, prevent oxidation and enhance the typical characteristics of the variety. Soft pressing is carried out using a pneumatic press, and alcoholic fermentation is carried out entirely in steel fermenters using selected yeasts at a temperature of 14-16 °C for several days. Malolactic fermentation is not carried out and the wine is refined in the bottle for several months.

Characteristics

Colour: straw yellow.
Bouquet: extremely fruity and floral with hints of acacia, kaiser pear, dried apricot and candied citrus fruit.
Flavour: dry, soft, with good acid structure and adequate persistence in taste and smell.

Pairings

A wine suitable for non-elaborate but tasty dishes, reminiscent of the mineral sensations of the sea. It also goes well with white meats and medium-aged cheeses.
