Vinification

The selected grapes are immediately directed whole to a soft pressing with subsequent cold decanting of the must. Fermentation takes place in steel at a temperature of 14-16°C for several days. Malolactic fermentation not carried out.

Characteristics

Colour: straw yellow.
Bouquet: wine with a very complex olfactory profile, with notes of ripe fruit, peach, pineapple, apricot and cedar.
Flavour: dry, warm, soft, with good freshness and excellent persistence.

Pairings

A wine suitable for seafood dishes, excellent with raw shellfish and sautés, it also goes well with earthy dishes, pasta with mushrooms and truffles, and blue cheeses.
