Vinification

Alcoholic fermentation carried out entirely in steel for several at a temperature of 20-22°C. Post-fermentation maceration on the skins for a few days which gives it great structure. Malolactic fermentation carried out entirely in barriques.

Characteristics

Colour: deep ruby red.
Bouquet: the nose reveals aromas of morello cherry, plum and wild berries, to which are added spicy notes.
Flavour: dry, warm, soft, velvety, with great structure and elegance.

Pairings

An important wine that prefers pairing with earthy first courses, ideal with red meats and mature cheeses.
